Week Two and Three

Hi everyone!


I have finished up the second and third weeks of my summer internship, which were both very exciting weeks. During the second week of my internship on Tuesday and Friday I assisted the Snap-Ed educators Damaris and Christy with two of their biggest projects for the week. On Tuesday, we held a cooking class early that morning for adult participants. The class focused on how to be food safety and kitchen safety. After going over the kitchen safety basics we prepared a dish of baked fruits. Later that afternoon we traveled to the Ermine Senior Citizen Center to teach a lesson on grains and provide a sample of Mom's Macaroni Salad. On Friday, we taught a lesson on protein and provided samples of meatloaf for the participants. On Wednesday, I assisted Mitch Whitaker with his Birds of Prey Program that he taught to a 4th grade class from Cowan Elementary School. The program was amazing and Mitch did a fantastic job of teaching the children and keeping the information fun and interesting.


The first two days of my third week here at the Letcher County Extension Office were focused on orientations. On Monday, June 1st, we held the 4H Camp Orientation for both campers and their parents. The orientation went over the remaining paperwork that needed to be filled out in order for campers to participate, what to pack for camp, and what was expected of the campers/ parents. On Tuesday, June 2nd, we held the teen conference orientation for the teens and their parents. This meeting focused on the remaining paperwork, what to pack for teens, and expectations of both the teens and their parents. Both of the orientations went over very well, the children and their parents were involved and excited to experience these events. Also on June 2nd, I assisted Ann Bradley with preparing and carrying out a Baby Fair for Letcher County parents and caregivers. The Baby Fair had booths of different companies handing out educational materials and giveaways/prizes for the parents and caregivers. To end my third week of being an intern I did some PR for the Snap-Ed program. We traveled around the county giving out flyers, discussing what services we provide, and answering any questions that the people we contacted had. This was a great opportunity to be seen in the community and make direct contact with our neighbors.
